Spiced Black Bean Jacket Sweet Potatoes | Donna Hay

Ingredients

• 4 x 350g sweet potatoes
• 2 teaspoons extra virgin olive oil
• 2 cloves garlic, crushed
• 1 onion, finely chopped
• 400g can black beans, rinsed and drained
• 2 teaspoons finely chopped thyme leaves
• 1 teaspoon smoked paprika
• ½ cup (125ml) water
• 4 vine-ripened tomatoes (400g), finely chopped
• sea salt and cracked black pepper.
• ½ cup (140g) natural Greek-style (thick) yoghurt
• 2 long red chillies, thinly sliced
• micro (baby) coriander and lime wedges, to serve
