Birria Nachos | Carroll Shelby’s Real Texas Taco Seasonings

Ingredients

• ½ bag tortilla chips
• 8 ounces pepper jack cheese, grated
• 1 medium-sized tomato, diced (about ½ cup)
• 1 small jalapeño, sliced into rounds
• ½ small white onion, finely chopped (about ½ cup)
• ⅓ cup cilantro
• 2 cups (about ½ recipe yield) Beef Birria , shredded
• ½ cup cotija cheese
• Preheat broiler to high.
• Line an ovenproof baking dish with half of the tortilla chips. Evenly top them with half of the pepper jack cheese, tomatoes, jalapeños, onions, cilantro and Beef Birria.
• Add the remaining tortilla chips, then top with remaining pepper jack cheese, tomatoes, jalapeños, onions, cilantro and Beef Birria.
• Transfer the dish to the broiler and cook until the cheese is melted and bubbly, about 3 minutes.
• Remove from the oven and sprinkle with cotija cheese.
