Ingredients

• 3 cups shredded Family Roast Chicken
• 1 x 375g packet penne pasta, cooked al dente, Â cooled
• 1 tablespoon extra virgin olive oil
• 1 brown onion, finely diced
• 2 cloves garlic, finely chopped
• 1 small red capsicum, finely diced
• 1 tablespoon tomato paste
• 1 teaspoon dried oregano
• 1 400g can chopped tomatoes
• 1 teaspoon caster sugar
• 1 cup chicken stock
• ¼ cup double cream
• 1 cup frozen peas and corn
• 100g baby spinach
• 2 cups of 3 shredded cheese blend
• 1/3 cup parsley, finely chopped, to garnish
