Ingredients

• 2 tbsp olive oil
• 100g smoked streaky bacon cut into small pieces
• 4 chicken breasts cut into chunks
• 1 red onion finely chopped
• 2 garlic cloves finely chopped
• 1 red pepper diced
• 1 yellow pepper diced
• 1 tsp oregano
• ¼ tsp chilli flakes (optional)
• 2 x 400g cans chopped tomatoes
• 1 tsp caster sugar
• small bunch of parsley roughly chopped
• 3 tbsp mascarpone
• 350g pasta any shape – if long, snap them in half
• 65g cheddar grated
• 50g mozzarella grated
