Winter Salad — Community Harvest Whetstone

Ingredients

• Washed mixed salad leaves
• 1 large carrot, grated
• 1/2 jar artichoke hearts
• 100g beansprouts
• 50-100g sauerkraut/kimchi
• 1 handful chopped walnuts
• 1 handful chopped parsley, rocket or coriander
• 3 tbs olive oil
• 2 tbs balsamic vinegar
• 1 garlic clove, crushed
