• 1 cup fresh pineapple
• 1 ½ cups powdered/ Confectioners sugar
• 2 teaspoons vanilla extract
• 1 cup vegetable oil
• 3 cups All Purpose Flour
• 1 ½ sticks unsalted butter
• 1 teaspoon salt
• 1 cup granulated sugar
• 2 teaspoons ground cinnamon
• Parchment paper to line bottom of the cake pan
• 3 large eggs
• 1 ½ cups finely chopped pecans
• 1 cup chopped pecans
