Ingredients

• 1 x 2kg butterflied chicken
• 1 cup fresh parsley leaves
• 1 cup fresh coriander leaves
• 2 preserved lemon quarters, flesh discarded, rind chopped
• ¼ cup olive oil
• juiced lemon and rind
• 2 long red chillies, stalk removed
• 3 garlic cloves
• 2 teaspoons cumin
• 2 teaspoons paprika
• 2 teaspoons sea salt
• 1 teaspoon freshly ground black pepper
• 200 grams plain yoghurt
• 3 tablespoons finely chopped fresh coriander
• ½ tablespoon lemon juice
• ½ teaspoon salt
• ½ teaspoon pepper
