Blender Beet Sauce with Pasta | Oregonian Recipes

Ingredients

• 1 pound pasta, such as spaghetti or fettuccine
• 2 8.8 ounce packages of cooked beets, drained
• 6 tablespoons olive oil, plus extra for serving
• 1 teaspoon salt
• 4 cloves of garlic
• 1 large red chile (seeded if you don’t want it too spicy)
• 6 ounces feta cheese
• 1 cup fresh dill, finely chopped
• 1 tablespoon lemon juice, fresh or out of a bottle
