Ingredients

• 1/2 lb (225 g) halloumi cheese
• 3/4 cup (180 ml) balsamic vinegar
• 2 tablespoons (30 ml) brown sugar
• 2 cloves garlic, halved
• 2 lb (1 kg) asparagus, trimmed
• 2 ripe but firm peaches, pitted and cut into quarters
• 3 tablespoons (45 ml) olive oil
• 8 slices pancetta, about 1/4 inch (1/2 cm) thick
