Ingredients

  • 1 small watermelon (8-10 pounds)
  • 12 ounces 100% Agave Tequila (Silver or Blanco)
  • 3/4 cup of grilled lime juice (8-10 limes)
  • 2 ounces St. Germain Elderflower liquor
  • 1/4 teaspoon kosher salt
  • salt and sugar for rimming (optional)
  • Prepare Hasty-Bake for grilling. Lightly brush with oil.
  • Remove rind from the majority of the watermelon, leaving a slice with rind on for garnish.
  • Cut the watermelon in long strips for grilling, and the slice with the rind on into wedges for garnish. Slice the limes in half.
  • Grill until both sides of the watermelon have grill marks and place in a shallow dish to cool and to collect the juices from the watermelon. Grill the limes flesh down until caramelized.
  • To make the margaritas, first rim the glasses with equal parts sugar and salt.
  • Then add all ingredients to a blender and puree until smooth. (You may need to do this in two batches)
  • Pour into glasses and garnish with grilled watermelon wedge.
