• 2/3 cup fine or medium ground cornmeal
• 1 1/2 teaspoons baking powder
• 1/2 teaspoon fine sea salt
• 3 eggs, beaten
• 3/4 cup extra-virgin olive oil
• 1 teaspoon vanilla extract
• 1/2 teaspoon almond extract, optional
• 1 lemon, zested and juiced
• 1 orange, zested and juiced
• powdered sugar, optional, to taste, for topping
• almonds, optional, to taste, sliced, for topping
