Fabulous Fish Tacos Recipe

Ingredients

• 1 cup light mayonnaise
• 1 cup seeded, chopped tomato
• 2 Tbsp. fresh lime juice
• 1 jalapeño, seeded and diced
• 1 Tbsp. Dijon mustard
• 1 lb. white fish fillets ( see editor's note below )
• 2 eggs, beaten
• ¼ cup milk
• ½ cup all-purpose flour
• 2 cups panko bread crumbs
• ½ cup vegetable oil for frying
• 4 tsp. vegetable oil, divided
• 8 corn tortillas (6-inch)
