Ingredients

• 1 tbsp (15 ml) vegetable oil
• 1 garlic clove, chopped
• 1 beef flap steak (bavette), about 3/4 lb (340 g)
• 2 cups (170 g) Savoy cabbage, thinly sliced
• 3 cups (90 g) kale, stems removed, leaves coarsely chopped
• 1 small zucchini, cut into halfmoons on an angle
• 1 English cucumber, thinly sliced into rounds on a mandoline
• 6 tbsp (90 ml) rice vinegar
• 2 tbsp (30 ml) maple syrup
• 1 tsp (5 ml) hot sauce (Sriracha-style)
• 1 package (200 g) soba noodles
• 2 tbsp (30 ml) low-sodium soy sauce
• 1 tbsp (15 ml) toasted sesame oil
• 1 Asian pear, halved, cored and thinly sliced on a mandoline
