Ingredients

• 150 gm speck, coarsely chopped
• 4 egg yolks
• 3 eggs
• 250 ml (1 cup) pouring cream
• ½ tsp freshly grated nutmeg
• 300 gm plain flour, sifted
• 175 gm unsalted butter, coarsely chopped
• 1 egg
• 2 tbsp extra-virgin olive oil
• 1 tbsp red wine vinegar
• ½ tsp seeded mustard
• 100 gm mixed baby leaves
