Ingredients

• 1 1/4 cups plus 2 tablespoons Extra-Virgin Olive Oil; plus more for the pan
• 1 cup plus 2 tablespoons Sugar
• 2 cups Cake Flour
• 1/3 cup Almond Flour or fine-grind cornmeal
• 2 teaspoons Baking Powder
• 2 teaspoons Baking Soda
• 1/2 teaspoon Kosher Salt
• 3 tablespoons Amaretto, or other Lliqueur
• 1 tablespoon Finely grated Lemon Zest
• 3 tablespoons Fresh Lemon Juice
• 2 teaspoons Vanilla Extract
• 3 large Eggs
• 1/4 cup Powdered Sugar
• 2 Sliced Peaches
• 1/4 cup Sliced Almonds
• A 9" diameter springform pan
