Ingredients

  • 1 (14-ounce) extra firm tofu block (not frozen)
  • 1 medium onion, diced
  • 2-4 tablespoons vegetable broth
  • 6 cloves garlic, minced
  • 12 ounces mushrooms, chopped
  • 2 tablespoon “chick’n” flavored vegetable broth powder, such as McKay’s
  • 2 tablespoons water
  • 2 cups frozen mixed vegetables (corn, carrots, peas, green beans)
  • 3 cups cooked rice, brown or white basmati or jasmine
  • 12 ounces fresh or frozen riced cauliflower (thawed)
  • ½-1 teaspoon Chinese 5-spice powder
  • 2” piece of fresh ginger, grated
  • 3 tablespoons reduced sodium tamari (or soy sauce), or to taste
  • Salt and freshly ground pepper to taste
