• 1 cup uncooked RiceSelect® Couscous
• 1 tablespoon olive oil
• 1 lb boneless, skinless chicken breast cut into strips
• 1 (16 oz) frozen mixed vegetables, carrots, cauliflower, & asparagus
• 1 (15 oz) can garbanzo beans, drained
• 1 ¾ cups chicken broth, divided
• 1 teaspoon (or to taste) mild curry powder
• ½ teaspoon cumin
• 1 teaspoon butter
• optional Chopped parsley for garnish
