• 4 tbsp extra virgin olive oil
• 2 medium leeks (thinly sliced, white and green parts only)
• 1 1/2 cup Brussel sprouts (halved lengthwise)
• 1 red pepper (thinly sliced)
• 1 cup cherry tomatoes (halved)
• 1/2 lb cooked roasted ham (diced)
• 1 tsp salt (plus more for seasong)
• 1/2 tsp pepper (freshly ground, plus more for seasoning)
• 1 cup mozzarella cheese (grated)
• 8 large eggs
• dried chillies or hot sauce
