• 2-1/2 cups dried penne pasta
• 1/2 cup olive oil
• 1 cup freshly grated Parmesan cheese
• 1/2 cup roasted pistachios
• a large bunch of tarragon, leaves stripped from the stems and chopped
• grated zest and juice of 1 lemon
• 1 garlic clove, crushed and chopped
• 3 cooked chicken breasts, sliced
• 1 cup fresh arugula
• salt and pepper
