• 75g crustless white bread
• 1 garlic clove, roughly chopped
• 3 tbsp Poon’s extraordinary chilli oil , plus extra to grease
• 25g grated Parmesan
• A big handful of parsley, finely chopped
• 4 x 150g sustainable white fish fillet, skin removed
• 30g butter
• 1 large shallot, chopped
• 2 garlic cloves, chopped
• 500g spinach leaves, washed
• 80g creme fraiche
• 40g grated Parmesan
