Ingredients

• 2 tbsp olive oil
• 2 shallot , chopped
• 1 lb (half a costco pack) ground turkey
• 8 oz mushrooms , cremini, chopped
• 1 tbsp herbes de provence
• 1/2 tsp sea salt
• 1/4 tsp black pepper
• 4 medium zucchini
• 2 large tomatoes , heirloom, chopped
• parmesan cheese , for serving
• side , rice or other, for serving
