Alper Sarikaya — Zucchini Soup with Curry

Ingredients

• 1 tbsp olive oil , extra virgin
• 1 onion , small, chopped
• 2 cloves garlic , minced
• 2 lbs zucchini , diced (about 7 C diced)
• 2 tsp curry powder
• 6 C vegetable broth
• 1/4 C rice
• salt , to taste
• pepper , freshly ground
• pinch cayenne
• 2 tbsp lemon juice , fresh
• 2 tbsp chives , chopped
• 1 small zucchini , sliced paper-thin, tossed with salt and lemon juice, marinated for 15 minutes or longer
• garlic croutons , optional
