• 1 tblspn Miso paste
• Zest of one small lemon
• 2 medium white potatoes
• 1 small purple sweet potato
• 1 stalk of spring onion
• Salt and pepper to taste
• Fresh thyme and curly parsley to dress
• 1 egg yolk for egg wash
• 1 tblspn butter, melted
