Ingredients

• 1.25 litres chicken stock
• 40g butter
• 1 small brown onion
• 1/2 cup dry white wine
• 2 cups Arborio rice
• 2 tbspns fresh thyme
• 250g chicken thigh fillets, cut into 1cm pieces
• 2 cloves garlic, finely chopped
• 60g Parmesan, freshly grated
• 160g button mushrooms, sliced
• 1 spring onion
• salt and pepper to taste
