- 280ml pot double cream (Elmlea)
- 300ml fresh milk
- 6 egg yolks (Coccodi)
- 2 ½ tbsp. caster sugar
- 1 tsp vanilla extract
- 1 ½ tbsp corn flour
- 1 packet strawberry jelly
- 1 bag frozen strawberries, defrosted (Asiago)
- 1 pre-bought strawberry jam Swiss roll
- Few tbsp sherry or liqueur to soak the sponge
- 2 pots double cream (Elmlea)
- 2 tbsp icing sugar
- Fresh berries to decorate the top
