Greek-Style Pasta Salad

Ingredients

• 1/3 cup olive oil
• 1 garlic clove, minced
• 3 pita bread
• 2 cups dry shell pasta
• 1 cup cherry tomatoes, stemmed and halved
• 1 medium green pepper, ½ inch dice
• 1 medium cucumber, peeled and cut into ½ cubes
• 1 small red onion, ½ inch dice
• 2-3 ounces feta cheese, crumbled
• 1/4 cup black olives
• 1 TBS. parsley, chopped
• 1 TBS. fresh mint, chopped (1 tsp. dried)
• ½ tsp. dried oregano
• freshly ground black pepper, to taste
