- 80 grams curry paste, Massaman (1/3 cup)
- 270 ml coconut milk
- 250 ml vegetable stock (1 cup)
- 800 grams sweet potato, peeled and cut into 3-4cm pieces
- 400 grams chickpeas, rinsed and drained
- 60 grams baby spinach
- 2 tablespoons peanuts, unsalted roasted and coarsely chopped, to serve
- 1 fresh red chilli, sliced, to serve
- 120 grams naan breads, 4 small warmed
