Creamy bacon & spinach pasta – Miss Polly's Kitchen

Ingredients

• 1x 250g packet of @freedomfarmsnz rindless eye bacon
• 400g Rigatoni dried pasta
• 1 medium shallot – thinly sliced
• 3 garlic cloves – chopped
• 1 red chilli – thinly sliced
• Zest one lemon
• 1 tsp smoked paprika
• 2 tsp dried oregano
• 1 & a 1/2 cups of ricotta
• Juice of one lemon
• 250g of baby spinach
• ¾ cup – 1 cup of pasta water
• Parmesan and copped parsley to serve
