Ingredients

• 1/2 Spanish onion, chopped
• 1/3 lb slab bacon or thick cut bacon, cut into 1/2 inch pieces
• 1/2 cup creme fraiche
• 1/2 cup gruyere, shredded
• coarse sea salt and pepper, to taste
• chives, for garnish
