Ingredients

• 3 large eggs separated
• 1 small pinch of salt
• 75g caster sugar
• 75g plain flour
• 50g melted butter
• 2 tablespoons cooking cocoa
• a little pure icing sugar for dusting
• 300mls thickened cream
• 1 teaspoon vanilla essence
• 1 cup canned or jarred sour cherries drained
• ½ cup cherry jam
• 200g 70% dark chocolate broken into small pieces
• 1 cup of cream
• 10 Malteasers
