Ingredients

• 1 tbsp olive oil
• 1 red onion, finely sliced
• 2 garlic cloves, crushed
• 250g lean beef mince
• ½ tbsp spicy chipotle paste
• 1 tsp ground cumin
• 1 tsp ground coriander
• a pinch of ground cinnamon
• 1 tbsp tomato purée
• a handful of chopped coriander
• 200g plain salted tortilla chips
• 50g cheddar, grated
• 2-3 tbsp soured cream
• 10-12 slices green jalapeños from 1 x 200g jar
• 3-4 ripe large vine tomatoes, roughly chopped
• 1 garlic clove, crushed
• 1 red chilli, finely chopped (optional)
• juice of ½ lime
• a pinch of caster sugar
