Tomato Sauce

Ingredients

• 1 small onion, finely diced
• 1 garlic clove, chopped
• 1 bay leaf
• Sprig of thyme
• 1 tbsp tomato puree
• 400g chopped tomatoes
• 100ml prepared vegetable stock
• ½ small pack of flat leaf parsley, chopped
• 1 tsp rapeseed oil
• Freshly ground black pepper
