• 1.25 LBs sirloin steak, cut into 2" x 1" x 1/2" strips
• Salt and pepper
• 2 tablespoons canola oil
• 1 tablespoon butter
• 1/2 cup finely chopped white or yellow onion
• 1 cup small white mushrooms
• 1/4 cup dry red wine
• 1 cup reduced sodium beef broth or 3 tablespoons More Than Gourmet demi-glace mixed with 3/4 cup water
• 1/4 cup sour cream
• 1 teaspoon Dijon mustard
