Ingredients

• 2 pounds of waxy potatoes (such as red bliss or new potatoes)
• 6 slices of thick-cut bacon, diced
• 1 medium onion, finely chopped
• 1/4 cup of apple cider vinegar
• 1/4 cup of water
• 2 tablespoons of granulated sugar
• 1 tablespoon of Dijon mustard
• Salt and freshly ground black pepper, to taste
• 3 tablespoons of fresh parsley, chopped
