Ali and Friends! Slow Cooker Beef Zucchini Stew

Ingredients

• 3 Pound Beef Roast, cut into 1" cubes
• 3 Tablespoon Butter
• 1 Large Onion, diced
• 1 Tablespoon Flour
• 4 Tablespoon Garlic Paste, or 4-5 Garlic cloves, pressed
• 3 Tablespoon Tomato Paste
• 0.25 Cup Parsley, chopped
• 0.75 Cup Red Wine
• 2 Cup Chicken Broth
• 1 Pound Carrot, peeled & grated
• 14 Ounce Diced Tomatoes
• 2 Bay leaves
• 6 Zuccini, halved & sliced in quarter inch slices
• 3 Tablespoon Olive Oil
• Salt and Pepper, to taste
