Ingredients

• 2 tbsp Thai red curry paste
• 400 ml coconut milk
• 750 ml vegetable stock
• 200 g rice noodles
• 200 g firm tofu
• 2 lions mane mushrooms
• 2 tbsp soy sauce
• 1 lime
• 1 small bunch fresh coriander
• 1 red chilli
• 1 spring onion
• 1 pinch salt
• 1 pinch pepper
• 1 splash neutral oil
