- 1 aubergine cut into 2cm dice (I like the round, pale-skinned ones)
- 4 tbsp olive oil

- 1 small onion
- 1 x 400g tin of tomatoes
- A pinch of dried pepperoncini
- 350g dried penne
- 1 tsp large capers
- A handful of basil leaves, torn
- 30g salted ricotta
