Tea Loaf –
TIP: To store, wrap in aluminum foil and keep in an airtight container for up to five days. The loaf will taste even better after a few days.
Ingredients
- 175g sultanas
- 175g raisins
- 300ml strong black tea
- Zest and juice of 1 orange
- 2 medium eggs, lightly beaten
- 275g self-raising flour
- 175g light soft brown sugar
- Butter for serving, as desired
- 6oz sultanas
- 6oz raisins
- 10fl. oz strong black tea
- 9oz self-raising flour
- 6oz light soft brown sugar
- Step 1 To prepare the fruit, in a large bowl, mix the sultanas, raisins, tea, orange zest and juice. Cover bowl with a clean tea towel and let the fruit rehydrate for a minimum of 6 hours.
- Step 2 When fruit is rehydrated, preheat oven to 180°C/Fan 165°C.
- Step 4 Place the loaf in the centre of the oven and bake for 1 hour 10 minutes.
- Step 5 Cooking is complete when the cake is firm to touch and when a cocktail stick is inserted into centre of cake and comes out clean.
- Step 6 Allow the loaf to cool in the loaf tin for 15 minutes before transferring the loaf to a wire rack to cool.
- Step 7 Serve tea loaf warm or cold, sliced, and spread with butter.
