Ingredients

• 3 T. olive oil
• 3 cloves garlic, chopped
• 2 onions, chopped
• 4 carrots, halved and sliced
• 1 t. dried oregano
• 2 t. dried basil
• 1 qt. water
• 1 qt. stock, vegetable or chicken
• 1 (28oz.) can diced tomatoes
• 1 (15oz.) can kidney beans, drained
• 3 zucchini, quartered and sliced
• 2 c. spinach, chopped
• 2 c. cooked pasta
• Croutons, for garnish
• Grated Parmesan cheese, for garnish
