Lemon ricotta cookies (Easter cookies) - Stefano Faita

Ingredients

• 125 ml (½ cup) unsalted butter, softened
• 250 ml (1 cup) sugar
• 2 eggs
• 1 lemon, zest
• 5 ml (1 tsp) vanilla extract
• 250 ml (1 cup) ricotta
• 500 ml (2 cups) all-purpose flour
• 2.5 ml (½ tsp) baking soda
• 1 ml (¼ tsp) salt
• Colourful sprinkles (for garnish)
• 500 ml (2 cups) icing sugar
• 1 lemon, juice (more if the glaze is too thick)
