• 1 tablespoon (15ml) Olive Oil
• 1 tablespoon (15ml) Lime Juice, fresh
• 2 cloves Garlic, minced
• 1 teaspoon (5ml) Cumin, ground
• 1/2 teaspoon (2.5ml) Smoked Paprika
• 1 lb (454g) Penne Pasta
• 2 tablespoons (30ml) Olive Oil
• 1 medium Red Bell Pepper, thinly sliced
• 1/2 medium Red Onion, thinly sliced
• 1 cup (240ml) Chicken Broth
• 1 cup (240ml) Heavy Cream
• 1/2 cup (75g) Sun-dried Tomatoes, oil-packed, drained and chopped
• 1/2 cup (50g) Parmesan Cheese, grated, plus extra for garnish
• 1/4 cup (10g) Fresh Cilantro, chopped, plus extra for garnish
