• 1 1/4 pounds (5 sticks) salted butter, at room temperature, plus melted butter for the pan
• 1/2 cup plus 5 tbsp. granulated sugar, divided
• 1 cup packed light brown sugar
• 1 tablespoon cinnamon
• 4 teaspoons ground ginger
• 1 1/2 teaspoons ground cardamom
• 1 teaspoon nutmeg
• 1/8 teaspoon ground cloves
• 1 1/4 cups white rice flour, like Bob's Red Mill
• 4 cups all-purpose flour
