Cheese & Bacon Quiche Cob

Ingredients

• 1 Bakers Delight White Cob
• 1 tbsp olive oil
• 1 onion, finely chopped
• 300g rindless middle cut bacon, diced (100g to sprinkle on top)
• 8 eggs
• ½ cup (125ml) thickened cream
• ½ cup (75g) self-raising flour
• ½ cup chopped parsley (save some for garnish)
• 1 ½ cups (135g) cheddar cheese
• 1 capsicum, chopped
• 1 punnet of cherry tomatoes, cut in halves
• Salt
• pepper
• Green salad leaves (to serve)
