Ingredients

• 1/4 cup (60 ml) mayonnaise
• 1 tbsp (15 ml) Dijon mustard
• 1 tbsp (15 ml) lime juice
• 4 cups (100 g) fresh baby spinach
• 1/2 bulb fennel, stems removed, thinly sliced on a mandoline
• 1 cup (30 g) sprouts (such as onion, radish, pea)
• 1/2 cup (15 g) small basil leaves
• 4 spicy Italian sausages, blanched and halved lengthwise
• 2 mangoes, peeled and halved along the pit
• 2 tbsp (30 ml) olive oil
• Salt and pepper
