Shrimp Stuffed Salmon Paupiettes - Good Food And Treasured Memories

Ingredients

• 454 gm WILD salmon fillet
• 2 Tbsp olive oil
• 3 Tbsp butter,
• 2 cloves garlic, minced
• 1/4 medium onion, minced
• 200 gm WILD shrimp meat, roughly chopped
• pinch of salt
• 1 Tbsp Old Bay seasoning
• 2 Tbsp fresh parsley, minced
• 1/4 cup cream cheese, softened
• 150 gm Guacamole (I prefer to make my own but prepared works to.)
• 10 grape tomatoes, roasted for garnish
