Carbonara is only 60 years old but it's such a staple it's as familiar as our beloved Bolognese.
Ingredients
- 500g spaghetti
- 300g flat pancetta, diced very finely
- 2 Tbsp extra virgin olive oil
- ½ white onion, diced very finely
- 4 cloves garlic, minced
- ¼ cup sweet white wine
- 1 cup grated pecorino
- salt and freshly ground black pepper
- 2 eggs
- 1 bunch parsley leaves, chopped finely
- shaved parmesan, to serve
