• 1 kilogram baby beetroot, stems and leaves attached
• 8 shallots, unpeeled
• 1⁄4 cup olive oil
• 4x 180g beef steaks
• 1 tbsp finely chopped rosemary 25 grams toasted walnuts, roughly chopped
• ***Rosemary yoghurt dressing
• 1⁄2 cup greek-style yoghurt
• 1 tsp finely chopped rosemary 1 tbsp honey
• 1 tbsp dijon mustard
• 1 tbsp olive oil
