Ingredients

• 450 g button mushrooms, sliced
• 1 box pasta, cooked to box instructions
• 1 tbsp olive oil
• 1 red onion, diced
• 2 garlic cloves, minced
• ¼ cup unsalted butter, cut into pieces
• 1 cup ricotta cheese
• 1 cup spinach
• ½ cup veggie broth
• ½ lemon, zest & juice
• ½ cup parmesan cheese, grated
• Salt & pepper
• 2 tsp parsley, chopped
• 1 cup pasta water
• Optional: breadcrumbs on top
