• 2/3 cup buttermilk
• 1/8 cup heavy cream
• 2 tbsp olive oil
• 1 shallot (minced)
• 2 cloves garlic (minced)
• ⅓ cup pine nuts
• 2 tbsp white wine
• ¼ cup mortadella (diced)
• 3/8 cup currants
• ½ whole parsley
• ¼ tsp anchovy paste
• ¼ tsp red pepper flake
• ¼ cup romano cheese (grated)
• ¾ cup parmesan cheese (grated)
• 2 ½ tsp salt
• 1/8 tsp black pepper (medium grind)
• 2/3 tsp dried oregano
• zest of one lemon
• 2 lbs ground meatloaf mix (beef, pork, veal)
