Four-Cheese Pie with Rustic Phyllo crust - Nutria

Ingredients

• 50ml Ionis Koroneiki Variety Extra Virgin Olive Oil, plus extra for brushing the sheets
• 400ml lukewarm water
• 1 tbsp white vinegar
• 1 ½ tsp salt
• 730–750g all-purpose flour
• A little cornstarch (or cornflour) for rolling out the dough
• 400g crumbled feta cheese
• 300g crumbled anthotyro (or ricotta as a substitute)
• 200g grated graviera cheese
• 150g grated kefalotyri
• 4 eggs
• 50g fine semolina
• 1 level tsp oregano
• Freshly ground black pepper
• 250ml milk
• Sesame seeds
• Some water
